Let's Eat !
Let the fun begin! Here are some of my delicious, satisfing, healthy
recipes. I hope your enjoyment of the food that feeds your cells
increases and you feel beautiful and nourished. I do not believe in
deprivation, I believe in better versions of the foods we love.
We can have it all! The food I make is so much better tasting
and more filling than the take out or store bought version. Food
should always be a happy experience not a rushed, detriment to
our health. So here are some of my crowd pleasers, I will be adding
to this list over time. Make Sunday's your day of cooking for the week
if you are busy and have good options available. Do your shopoing the day before so you don't feel rushed. The shopping is more fun if you do it in mid-morning or an odd hour when the store is almost empty. It should feel like an indulgence, browse look at new options, take your time. Enjoy your life the moment you are in and make deliberate choices that support the life you want.
If you shop at Aldi's or Hungryroot this will be an easy hunt for you.
You can safely eat bread, pasta, and a variety of other things you think
make you fat. What is making people fat is dieting and processed food.
Assume everything I use is organic and stay's as close to it's original form as possible.
Let's start with the Alternative Ingredients options,
Pasta Alternatives
sprouted pasta
quinoa pasta
whole wheat pasta never ever eat enriched flour!
Bread Choices- Organic
Bakery Ciabatta- if made with wheat not white flour and fewer than ten ingredients. NO ingredients you can't identify.
Rye- real whole rye seeds ground
Sourdough- with whole wheat
Baguette- with wheat flour
Dave's Bread- grains or seeded. Aldi's has their own version it's fantastic
Vegies to Eat Often
Roma tomatoes
Garlic- daily
Avacado- daily on seeded bread or in beans&rice
Red Bell Pepper- sliced for snacks
Cauliflower- Baked with organic tumeric, oo, garlic minced
Fruits
Whole Pomegranate Seeds- daily for cellular renewal
Blueberries- daily
Rasberries-often
Limes or Lemons fresh- in water kept in pitcher daily for cleanse or bloat
sprinkle pink sea salt in it first thing in the am
What I eat for health and happiness!
Antibiotic Free Pork, or Turkey Meatballs
1-2 Talbsp Pesto- If you love Pesto use more
minced fresh garlic as much as you like, I do 4 to 5 cloves
fresh Parm or Asiago shreds
1 organic egg
half cup bread crumbs as healthy as you can find, real ingredients
3 to 4 healthy shakes of Italian mixed spices
Tblsp Pink Sea Salt
Fresh Cracked Pepper to taste
Tspn Oil
If it is a special occassion and I have it, I place tiny pearls of fresh
Mozzeralla in the center of each ball. Everyone thinks this is magic.
Mix all these together in a bowl squishing all the ingredients through the meat well. I like to touch everything I work with it connects me more with the process as a pleasure not a chore. Do not cook when you feel angry, food with love tastes much better. Better to wait if it's not pleasure. Do not view food as an obligation. It's a gift, so is clean water, stay humble appreciate the meal!
I use a giant steel skillet that I can brown the meatballs for 5 or so, minutes before placing into the oven for another 15 minutes. Turn them while browning gently to get all the sides. I use a tablespoon as a guide for the size of the balls. I use a steel pan that can go from burner to oven.
While the meatballs are cooking prep the pasta of your choice. I like Penne. For Sauce I do a small saute pan with minced garlic two cloves,
two tbsp pesto and enough Olive Oil to cover the pasta. I let this
simmer on low, med while the pasta cooks. After I drain the pasta I mix it directly into the oil pesto mixture in the pan. Dish out and add meatballs, sprinkle asiago on top. You can also eat these meatballs alone topped with a little ricotta.
If you have guests buy a fresh rosemary or seasalt italian round bread.
Cut into half inch slices, one per person. coat with olive oil, pesto and asiago. Place in toaster oven for 5-6 minutes or until crisp. Everyone loves this.
If you want to do a salade after for digestion, use arugula, lemon squesezed into olive oil and top with larger shreds of cheese and pine nuts if you have them.
This meal goes really well with a stronger red wine like a Super Tuscan or Chinati. Any red works though, do what makes you happy!
Most important eat slowly, sit down and be happy with what you did out of love even if it's just you. Eat on your good dishes, here are a few happy choices to help you enjoy! Elevate your meal, start using linen napkins they wash and they add elegance to your everyday life. Act ike you are a special guest, buy yourself flowers often. You will feel loved authentically.

Organic Oats
I microwave these quickly and add a scoop of Cashew butter and mix.
I think this is the meal that keeps me thin honestly. Throw in blueberries for antioxidants.
and scrambling eggs, general cooking. I can't live without them!
Organic Greek Yogurt & Berries
A few tablsp of yogurt, 2 tblsp whole Pomegranate seeds (for cells),
Scrambled Eggs & Spinich
Chop one clove of garlic in Olive oil and organic butter saute lightly. You do not want to cook the garic completely. Garlic closer to raw is better for immunity. The organic butter helps control hormones and weight. Scramble one organic egg and add to garlic. Love this device, Hand Mixer, the eggs come out so fluffy. Ok after you have let the egg cook 90% flip it to the side and put a handfull of spinach in the pan and add a little oil on top, salt & pepper and let that cook just long enough to reduce size. I can put this on top of seeded toast or corn or wheat tortilla. Use organic havarti cheese if you like in the egg. Follow the links below for elecvated mornings,
Comfort Easy Pasta
5 Cloves of garlic
1 Whole cooked organic rotisserie chicken (Fresh Market)
2 Roma Tomatoes
Olive Oil
Pink Sea Salt
Garbanzo or Protien Angel Hair Pasta
half cup Parm shreds
take one whole organic rotisserie chicken and pull apart into a bowl,
use pink sea salt grinder to season the pulled chicken and set aside.
Cook pasta (protien, bean, or alternative). While the pasta is cooking, chop 5 cloves of garlic and add to saute pan with quarter cup of olive oil, let this warm slowly while the pasta cooks. Dice two Roma tomatoes and put aside. When the pasta is finishsed, drain it and salt it. Add the tomatoes to your garlic. You can use the still warm pasta pot to mix all the ingredients together. Toss in chicken and pour the oil and garlic mixture over the top. Sprinkle cheese of choice over the top.
